Here at Blackledge we strive to recreate some of the greatest alcoholic beverages lost to time. As a research winery, we're constantly working to revive historical recipes of wines, ciders and meads that speak for a time one can only imagine. We bring history to life in a way that can be tasted and shared, discussed and debated. Because what we produce is project-driven, the varieties we may offer is constantly changing. Those recipes that we find successful will be available here in limited quantities while they last.

2017 PENN'S 1674 RECIPE CIDER
Based on a cider recipe from William Penn's wife Gulielma's 1674 receipt (recipe) book. It's made from local Pennsylvania heirloom cider apples, raisins, spices and natural yeast. This is a smooth, crisp traditional cider that's dry, still and unfiltered and that's been aged in a fresh apple brandy barrel. No sulfites are added at any point in the fermentation or bottling process. Total production: 1 barrel.

2017 SUN INN CIDER & RED LION CIDER
Using the base cider blend from the Eliza Smith, Holt and Penn recipes, we made a traditional early American farmhouse cider as a benchmark to our other projects. Traditional early American production methods and fermenting dry using the apples' natural yeast, we aged the cider in fresh bourbon barrels while the natural malo-lactic fermentation ran its course. Being such a clean, easy drinking cider it immediately found a home at two of our favorite local historic inns. Total production: 2 barrels.

2017 ELIZA SMITH'S 1727 RECIPE MEAD
COMING SOON.......Taken from Eliza Smith's book "The Complete Housewife" first published in 1727. This is a true English style mead made with wildflower honey, herbs, spices, natural aromatics and fermented using an old strain of ale yeast. We cold crashed this mead just off-dry taking advantage of the chillingly cold winter we experienced this year, then moved it into a neutral French Oak barrel for conditioning. While we'll have a small amount of this mead available in time for the 2018 winter holidays, most of it will be aged for several more years. Total production: 1 barrel.

OFF DRY ~ STILL ~ COURSE FILTERED ~ NO ADDED SULFITES ~ GLUTEN FREE ~ ABV 12.2%
